Brother I just made this tonight and it was SO good. Thank you. I’m no cook, so the one-pan situation seemed approachable for me. Diced a big sweet potato. I didn’t have kale, so I swapped it for some frozen spinach on hand. I decided to chop some onion and garlic instead of using powders for that part of the spice mix, and also opted out of the salt since my vegetable stock is already heavily salted. All into the pan and done. I did have to add a bit more water for some reason because the lentils soaked it all up. Delicious and smelled amazing while cooking. Thank you my dude.
