The Best Cooking Tricks for a Perfect Jackfruit Roast + Creamy Mashed Potatoes

Lets make the best Vegan roast I ever tasted using Jackfruit! It took me while to figure out how to get the best flavor and texture with Jackfruit, but I finally found a fool Proof method!

Ingredients:
3 cans of Jackfruit
2-4 tbs avocado oil
1/2 yellow onion
2-3 carrots
2 ribs of celery
3 tbs tomato paste
1/4 cup + 3/4 cup red cooking wine
6 cups of no beef broth + 4 cups (for Jackfruit prep
2 tbs corn starch
2-3 stems of fresh thyme or 1 tbs dried thyme
1 stem of fresh rosemary or 1 tbs dried rosemary
2 bay leaves + 2 bay leaves ( for jackfruit prep)
Salt to taste
Black pepper to taste

Jackfruit Marinade:
1/4 cup Soy sauce or coco aminos
2 tbs vegan Worcestershire sauce
1 tbs coconut sugar
1/2 tbs marmite
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp dried thyme

Creamy Mashed potatoes:
2 Ib Yukon gold potatoes
1/4 cup vegan butter, melted
1/4 cup unsweetened plant milk
Salt to taste
1 tbs garlic powder or to taste
Black to taste
1 tbs fresh parsley, chopped

  1. I made this last night and… Wow pretty close. I want to work on the flavor trying some additional seasonings to make it taste a bit more meaty in flavor but the texture came out amazing. I let it sit for 6 hours on a simmer. And I would make my carrots bigger next time and add some solid potatoes in with the jackfruit for some more texture (just like medium to small cut potatoes). But thank you for this amazing recipe and all the recipes you share with us that make being vegan less like a chore and more like a lifestyle.

  2. I used a little dab of Chinese black vinegar when I do a vegan meat approximation, towards the end. (without any wine, marmite or whistershire added in, I just never got into using these things). When I did jackfruit BBQ, I finished it by spreading it out on a cookie sheet and putting it in the oven for a little while, it made the texture more satisfying. I love your channel and this one looks WONDERFUL. like many vegetarians, I sometimes missed the dishes I grew up eating. thank you, Brandon ❤ I made pot roast style vegetables when I’m craving this, and I made a roux with chickpea flour to get that started, putting carrots, potatoes and peas in there.
