for the Mexican casserole, did you use flour or corn tortillas? also, I would add sliced olives.
for the curry casserole, I might use quinoa instead of white rice for a whole grain (also gluten-free) that cooks in about the same time.
these all look wonderful! I love how you freeze spinach, before it goes bad. I do that with greens for smoothies. and crumple it after it’s frozen to save space in the freezer.
We really love the flavors of curry. Would you suggest doubling up in the spices then? Loved the video!
