In this video, weโll show you how to whip up these plant-based bars that are dairy-free, refined sugar-free, and oh-so-easy. Store them in the freezer for a grab-and-go dessert thatโs as healthy as it is delicious!
๐ Ingredients:
140g desiccated coconut
190g frozen raspberries
2 tsp vanilla extract
4 tbsp maple syrup
250g good-quality dark chocolate (or chocolate of choice, vegan-friendly)
๐ฉโ๐ณ Instructions:
Line a loaf tin with baking paper.
In a food processor, pulse desiccated coconut, frozen raspberries, vanilla extract, and maple syrup for a few seconds until the mixture starts to stick together (donโt over-process to keep some texture).
Press the mixture evenly into the lined loaf tin. Freeze for 1-2 hours until solid.
Slice into bars (about 8-10, depending on size) and return to the freezer.
Melt the chocolate (use a microwave in 30-second bursts or a double boiler). Dip each bar in the melted chocolate using two forks to coat evenly.
Place coated bars on a parchment-lined tray and freeze until the chocolate sets (about 10-15 minutes).
Store in the freezer for up to a month. Enjoy straight from the freezer or let soften slightly!
๐ก Why Youโll Love This:
No-bake and ready in 15 minutes (plus chilling)
Naturally sweetened with maple syrup
Vegan, dairy-free, and perfect for healthy snacking
Tastes like a homemade Bounty bar with a raspberry twist!
โ Tips & Notes:
Chocolate coating: Use vegan dark chocolate (70%+ cocoa for richness) or milk-style vegan chocolate for a sweeter vibe.
Texture: If the mixture feels too wet, add a bit more desiccated coconut; if too dry, add a splash more maple syrup.
Storage: Keep in an airtight container in the freezer to maintain texture.
Variations: Swap raspberries for frozen strawberries or blueberries for a different flavor!
๐ฅฅ Serving Ideas: Enjoy as a post-dinner treat, a healthy snack, or a party dessert. Pair with a cup of tea or coffee for ultimate cozy vibes!
