I just made this. It is the best vegan deli seitan I’ve ever had. Makes Tofurkey look like garbage. I made it almost exactly as written in the recipe. I didn’t have smoked salt so I used smoked paprika and salt instead. Easy to make. You’re a genius, man. Truly.
Mine is soft and squishy after coming out of the instant pot for an hour. Will it firm up in the fridge? Maybe I’ll put it in for another hour….. Also, it would have been helpful to put the weight measurements in your blog recipe.
No doubt that homemade seitan is cheaper than store bought anything. Here is Canada the bag of VWG is more than $16, making it rather expensive to make. We need to have our system flooded with cheap American products to teach the greedy Canadian business man a lesson.
