    To skip the pressing, buy extra-firm tofu (just dab it dry after slicing). In any case, cut up and freeze a few blocks at once (I do 5 at a time). That way, whenever you want some you just gotta defrost, season and bake. The whole pressing and freezing isn’t supposed to be done every time. Do that bit in bulk, then you always got some frozen ready to go. Cheers guys

  2. Now that I’ve made this recipe enough times, it’s become so easy to feel out the ingredient amounts for different sized batches of tofu chunks reclaimed from the freezer elves!
